I have a ton of recipes for different ways to fix oatmeal, so I thought I would start a separate thread!
I'm obsessed with baked oatmeal, so here's my favorite:
Baked Blueberry Cheesecake Oatmeal
Makes 1 serving
Ingredients:
1/2 cup dry oats 1 cup water 1/8 t. baking powder 1 t. vanilla extract 1/4 cup fresh blueberries 2 T. sugar-free caramel syrup 5 t. fat-free cream cheese or fat-free cottage cheese sugar substitute to taste 2 T. liquid egg whites 1/2 scoop vanilla protein powder
Directions:
Mix the above in a sprayed oven-proof bowl. If using cream cheese, cut (slices) directly into bowl along with oatmeal. Mix in to disperse cheese.
Bake at 350 for 30 minutes.

Baked Banana Bread Oatmeal
Makes 1 serving
Ingredients:
1/2 banana, mashed 1/2 cup dry cooking oats 1 cup water 3 T liquid egg whites 1 T sugar-free Torani Enlish Toffee syrup (optional) sugar substitute to taste 6 large walnut halves, broken 1/8 t baking powder
Directions:
Mash banana. Mix with other ingredients. Spray oven-proof bowl with cooking spray. Pour oatmeal batter in to it. Bake at 350 for 30 minutes. Enjoy!

Peanut Butter and Jam Oatmeal
Makes 1 serving
Ingredients:
* 1 tsp Natural Peanut Butter * 1 tbsp Strawberry Preserve, Sugar-free * 1/2 cup Quaker Oats Old-fashioned * 1/4 cup Egg Whites * 1/8 tsp Cinnamon, Ground * 1/2 scoop Vanilla Protein Powder * 1/6 cup Strawberries * water as needed * Splenda as needed
Directions:
Cook oatmeal per instructions. While stirring, add 1/4 cup egg whites. Cook and stir til done. Stir in 1 T jelly. Stir in 1 t peanut butter. Heat through. Add a little splenda to taste. Before serving mix in 1/2 scoop vanilla protein powder. Stir again. Pour into bowl. Top with chopped strawberry and dash cinnamon.
